any help will be welcome

MKV Merge

If you download MKVtoolnix, it includes MKVmergeGUI, which will let you remove any unwanted tracks from the MKV.

You just add the input/MKV file to GUI, and it'll display all the video/audio/subtitle tracks, and you uncheck to remove the "type: audio" ones you don't want (hopefully they labeled all the audio ones with the language, if not you'll have to do some trial and error, but the Spanish one is probably first in your case).

Then, at the bottom, you choose the path where you want the new MKV to be saved and press the START MUXING button, and it'll quickly make you a new MKV with only the audio tracks you want - the video quality will remain untouched since it's just passed through.

I have the same issue with DVDs. Converter (or the MPEG2 Plugin)does not accept my settings - no matter which audio or subtitle language I choose.
Sometimes it does not even recognize all available languages (while other programs do).
